Crab and Apple Salad | Gestational Diabetes UK

This simple crab and apple salad was a quick lunch I put together while on holiday in Elgol, on the Isle of Skye. A simple green salad, fresh crab meat, seafood sticks and matchsticks of apple with a quick and easy vinaigrette dressing. Low-carb, fresh, crisp and oh so simple!

Crab and Apple Salad
  • 130 grams white crab meat (approx. one medium dressed crab)
  • 6 whole seafood sticks unwrapped and sliced
  • ½ medium Granny Smith apple cored, skin-on, cut into matchsticks
  • 1 whole baby gem lettuce sliced
  • ½ medium cucumber sliced
  • 1 medium celery stick sliced
  • ½ medium avocado diced

for the vinaigrette dressing

  • ½ tbsp apple cider vinegar
  • ½ tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp Dijon mustard
  • salt and ground black pepper to taste

for the salad

  • Place the lettuce, cucumber, celery, avocado and apple into a large bowl. Drizzle with some of the dressing (reserve some for the end) and gently toss

  • Serve some of the dressed salad into a bowl, add the crab meat and seafood sticks, and then finish with another drizzle of dressing. Serve with a slice of with a starchy carb of your choice (1 small slice of bread, 2 crackers, 3 egg-sized cooked new potatoes, 3 x tbsp of cooked rice/pasta/couscous)
