Getting veggies into fussy eaters can be hard work and I’m always trying to find new ways to up my children’s nutritional intake.
I’ve made lots of hidden veggie recipes in the past but they generally take quite a bit of time as you need to cook the veggies in a sauce then blend it all up.

So I decided to try a different method whereby I blitz a bunch of veggies raw then keep them in the freezer to add to meals when I need to get dinner on the table fast.
I used carrots, celery, courgette, red pepper, broccoli and cauliflower.

I blitzed the carrots and celery up first, just to make some room in the food processor as all the veggies won’t fit in together.

Then added the courgette, red pepper, broccoli and cauliflower.

I blitzed it again and also stirred the mixture with a spoon just to make sure everything was evenly broken up.
This is the consistency that you are looking for. Small grain-like pieces of veggies. Be careful not to over-blitz it or the veggies will turn mushy.

I then transferred the veggies into a large freezer bag.

Or you can pop them into individual containers or ice cube trays too.

Store in the freezer and when ready to use simply break off chunks of the mixture and add to meals like spaghetti bolognese, chilli and curries.
If you want to completely hide the veggies then you can make a quick pasta sauce with tinned tomatoes/passata, some herbs for taste and then add in the frozen veggies. Blitz to make the sauce completely smooth and mix with pasta.

Frozen Veggie Packs for Fussy Eaters

Ingredients
- 3 medium carrots
- 3 celery sticks
- 1 medium courgette
- 1 red pepper
- 100g broccoli
- 150g cauliflower
Instructions
- Wash the veggies and peel the carrots.
- Cut the carrots and celery into big chunks and add to a food processor.
- Blitz for a few seconds to break them down.
- Chop the courgette, red pepper, broccoli and cauliflower into chunks and add them to the food processor.
- Blitz again for another few seconds.
- Remove the lid and stir the veggies so that they all get evenly broken down and then blitz again.
- Be careful not to over-blitz as the veggies will start to go mushy. You want a very small grainy texture.
- Transfer to one large freezer bag or individual pots or food trays and freeze.
- When ready to use, simply break off a chunk and add to meals like spaghetti bolognese, curries and chilli.
- You can also make a simple pasta sauce by cooking the frozen veggies in tinned tomatoes, seasoned with herbs and then blitz until completely smooth.
Notes
These veggie packs will keep in the freezer for up to 2 month.
